To know the story of the modern Easter Colomba, with a step back to the medieval age we can go back to what would be the birthplace of the dessert , steeped in legendary elements. A first story of the Easter dove links the cake to the king of the Lombards (as well as king of Italy) Alboin who after three years of siege on the eve of Easter in 572 conquered Pavia, however, saving the city from looting because among the gifts received were of the exquisite sweet breads prepared in the shape of a dove, in the Christian-Catholic imaginary universal symbol of peace.

Another legendary story of the dove postpones its origins to several centuries later, at the time of the battle of Legnano (1176), when the emperor Frederick Barbarossa was defeated by the League of Lombard municipalities. According to this version, the Easter dove was born by the will of a leader of the League of Lombard municipalities who in honor of the victory had special loaves in the shape of a bird prepared to pay homage to the three doves that during the hard battle had “watched over” the signs of the League of Municipalities.
